In my bubble and squeak there is only one thing that MUST be in there and that is the mashed spuds, everything else is what you have to hand or what was left over from the day before. In mine today I had some mashed spud, peas and sprouts that the wife and my son had left yesterday. I mixed them all up in a bowl, first with a knife so I could cut the sprouts up smaller then with a fork. Then I added a good grind of pepper ( I like a lot of pepper ) A sprinkling of garlic powder A sprinkling of ginger powder A sprinkling of cayenne pepper and them mixed them all together I chopped half an onion and fried it off until it just started to go brown. ( I like frying the onion till it starts going brown because I think it gives it a sort of nutty taste ) then added that to the mix. Some people put meat in there bubble and squeak but I don't, I like my meat separate. Heat some oil in a frying pan until it gets hot, divide the mixture into two patties about 4 to 5 inches wide and about 3/4 of a inch thick Fry them in the pan until they get a nice crispy coating before you turn it over (you want it to look nearly burned) Then turn it over and do the other side tea_cooling[1]23 by mandalawley, on Flickr I had mine with steak and an egg Tea1[1]23 by mandalawley, on Flickr
