I make three different types of pancakes depending on what I want them for
My first one is the American type
I use :-
1. Half cup milk
2. 1 large egg
3. 1 table spoon of melted butter or vegetable oil
4. 1 table spoon lemon juice
5. Half cup + 1 tea spoon flour
6. One and half tea spoons baking powder
7. 1 tbsp sugar
8. 1 pinch of salt
sieve the flour, baking powder, salt and sugar into a bowl and mix well.
Mix the milk, egg, butter or oil and lemon juice in a jug and mix well.
Pour the the wet ingredients into the flour and mix together, don't over mix, mix until it is combined but there are still small lumps left in there.
Heat a frying pan over a medium heat and wait until it gets up to temp then add a little oil or butter ,( I use the oil that you spray on as I find it covers the pan better) When it's melted, add a ladle of batter (I just pour a little in there ). It will seem thick but this is how it should be.

Wait until the top of the pancake begins to bubble and they don't fill in when they burst,
then turn it over and cook until both sides are golden brown.
You can eat your pancakes drizzled with maple syrup or cream or what ever you like, I like mine with bacon and eggs

My second pancake is a little thinner and wider that the American pancake
I use :-
1. Half cup + plus a table spoon of milk
2. 1 egg
3. 1 table spoon of melted butter or vegetable oil
4. 1 table spoon lemon juice
5. Half cup flour
6. One and half tea spoons baking powder
7. 1 tbsp sugar
8. 1 pinch of salt
I am using a little less flour and a bit more milk
sieve the flour, baking powder, salt and sugar into a bowl and mix well.
Mix the milk, egg, butter or oil and lemon juice in a jug and mix well.
Pour the the wet ingredients into the flour and mix together, I mix this a little bit more because I want it to spread out a bit more but still only mix until it is combined and there are still small lumps left in there.
Heat the frying pan over a medium heat and wait until it gets up to temp then add a little oil or butter. Pour about 1 and half ladles of batter and tilt the pan until it covers the bottom.
Wait for the bubbles then turn it over

You can stack them and drizzle some maple syrup over, I like to put a filling in between each pancake

I will eat about half of it for breakfast and warm the rest up for a midday meal [/a]

sieve the flour, salt and sugar into a bowl and mix well.
Mix the milk, egg, butter or oil in a jug and mix well.
Pour the the wet ingredients into the flour and mix together, This one I mix until smooth.
Heat a frying pan over a medium heat and wait until it gets up to temp then add a little oil or butter ,( I use the oil that you spray on as I find it covers the pan better) When it's melted add about half ladle of batter into the pan and tilt until it covers the bottom of the pan. You only need a thin coating for this pancake.
Fry for about a minute then shake the pan to see if the pancake moves freely, (you will not see the bubble because there is no baking powder in there) When the underside is a golden brown turn it over and fry the other side for about 20 seconds.
You can put fillings in them and roll them up or just roll them up drizzle maple syrup over them, sprinkle sugar on them or what ever you want
I make more of this batter because I make a few pancakes and the rest of the batter will keep in the fridge for a couple of days.
